This is the recipe I make on repeat when I want fresh bread without actually spending a morning on it. Mix the dough at night, let it sit in the fridge, and by morning it’s ready to shape and bake.

Ingredients (makes 10 rolls)
- 25 g fresh yeast
- 4 dl water
- 1 dl milk
- 1 tbsp honey
- 1.5 tsp salt
- 9 dl flour
Instructions
- Stir the yeast, water, milk, honey, and salt together in a bowl.
- Mix in the flour.
- Let the dough sit in the fridge overnight.
- Tip the dough out onto a floured surface.
- Flatten it out and cut into 10 pieces.
- Move the pieces onto a baking tray.
- Bake at 230°C (450°F) for 14 minutes.
