Lettuce and spinach seeds are started indoors today. The lettuce will move outdoors soon to get a few days of cold, while the spinach tray stays in until it’s time to transplant — I want to compare this indoor batch against the spinach I’ve winter sown outdoors elsewhere. My track record with indoor spinach isn’t great, but plenty of other growers swear by it, so I’m giving it another go. This particular variety is Giant America, new to me this year.
