The kale is still stretching to a dinner now and then, even this deep into winter. Tonight it’s alongside a root celery mash — rotselleri, Västerbotten cheese, and creme fraiche mashed together — which might be one of my favorite ways to use up whatever root vegetables are still lingering in storage.
Simple, warming, and it makes good use of a garden that’s mostly asleep right now.
