Some of this year’s Amandine potatoes sat too close to the surface and turned green from sunlight. Green potatoes aren’t for eating, but they’re perfect to keep as seed potatoes for next season instead of throwing them out.

I label the box carefully so it doesn’t get mixed up with the eating potatoes, and tuck it away somewhere dark and cool until spring.
